Today's Outfit - Denim over Floral Maxi

Thrifted Items:  Maxi dress, denim top/jacket.

Dinner - Crescent Bake

Wrap ingredients of your choice in crescent rolls from a can in the refrigerator section of the supermarket.  I sauted mushrooms in a little marg, steamed broccoli, added a little leftover diced ham, topped with cheese and seasonings of choice - and closed dough around the bundle.  I topped w/ a mixture of fat free mayo, dijon, and honey.  I made two separate bundles - one for each of us.  Very good and easy.

Scarf Reorganization

I was inspired after watching a girl on youtube organize her scarves using plastic snap together shower curtain rings.  You can hook them on a hanger and hang several scarves that way.  I wanted to free up my clothes rod space for other clothing, so I strung them together and attached them to clothes rods at opposite ends of my closet.  These are not used anyway as there are shelves underneath that hold shoes.  This is mainly my shoe closet.  It worked perfectly!  I can still see them all displayed.  (My heavier winter scarves I have folded on shelves.)
Oh!  And these rings were only $1.19 for a box of 12 at Target.  I bought 5 boxes and used them all for making two rows.
I've got quite a few scarves because I love using them to accessorize outfits or wear in my hair, plus they are so inexpensively thrifted.  Usually only $1-$3 each.  I think that's a great deal.

Dinner - Bow Tie Pasta w/ Sundried Tomatoes and Mushrooms

Delicious and easy!
Cook bow tie pasta per box directions.
Saute sundried tomatoes in oil (from jar), mushrooms, 2 Tbsps marg., salt, pepper, garlic salt/powder.  Mix w/ drained pasta and top w/ parmesan cheese.

Today's Outfit

Small handmade pouch on long rope:  gifted by hubby (I'm using it to wear across body or wrapped on belt to carry cell phone and a few essentials when I don't want to carry a purse.  I really love it.  Thank you, baby.)

Dinner - Brussel Sprout/Ham/Swiss Bake

Steam brussel sprouts in microwave.  Mix together in large bowl, steamed sprouts, diced ham, 1 can cream of mushroom soup, 1/2 cup milk, 1/2 can durkee canned onions, 1/2 c. shredded swiss, salt, pepper, garlic salt/powder, onion powder. 
Pour into sprayed baking dish and bake at 400 for 30 min.

Today's Outfit

Thrifted Items:  Floral skirt, light green tank top, green sweater, jacket, scarf, wedges, Nine West purse.

Dinner - Mushroom Swiss Chicken w/ Broccoli Salad

I marinated the chicken in a baggie of olive oil, balsamic vinegar, greek seasoning, and garlic powder.  After a couple of hours I took out the chicken, placed on foil lined baking pan, added a little more seasoning, covered w/ foil and baked at 425 for 40 min.
For the broccoli salad I just cut up some broccoli and carrots, added some slivered almonds, bacon bits, shredded cheese, 2 pkts of Equal, a little apple cider vinegar, and some fat free mayo.

Dinner - Pork Chops w/ Apples and Stuffing w/ Nuts

Pork chops simmered 45 min.(covered, in large skillet) in a concoction of margarine, soy sauce, apple cider vinegar,  chicken broth, brown sugar, cinnamon, nutmeg, garlic salt/powder, onion powder, salt and pepper with a diced green apple added last 15 min.

Dinner - Catalina Salad

Love this salad.  It's a meatless version of one similar I make with ground beef.
Just mix together some black beans, corn, avocado, shredded cheddar cheese, diced onion, tortilla chips and fat free catalina dressing.

Dinner - Beef Stroganoff

I'm getting pretty good about freezing leftovers to make other meals with later.  I used to never do that, but I'm kind of enjoying it now.
I had a package of leftover cut up roast that I defrosted and used in this stroganoff.  So all I had to do was boil the noodles, and whip together the stroganoff part by sauting onion and fresh mushrooms in margarine, then adding a little cornstarch disolved in water, then add in a cup of water w/ a beef bouillon cube disolved, a little sour cream, cream cheese, the roast and seasonings.  And there's enough left over for a lunch for the two of us later this week.

Thursday's Dinner - Chicken Parmesan

One of my favorites and simple.  Dip the chicken pieces in milk w/dijon.  Shake in baggie w/seasoned breadcrumbs, garlic salt, salt, pepper, italian seasoning, and shredded parmesan.  Bake in 375 oven for 30 min., turning over halfway through cooking time.  Top w/ a little more parmesan and let melt.  Place on top of pasta w/ homemade sweet marinara sauce w/ diced tomatoes, garlic salt/powder, basil, 1 pkt equal, and a little milk added.

Dinner - Chicken Cornbread Bake

I love this stuff.


Ingredients

  • 1/2 c marg
  • 1/2 onion, finely chopped
  • 1 can whole kernel corn, drained
  • 1 can cream style corn
  • salt
  • 2 eggs
  • 1 pkg jiffy cornbread mix
  • chicken, chopped, cooked
  • 1 can mushrooms, drained
  • 4 oz. low cal sour cream
  • pepper
  • 8 oz monteray jack cheese or mexican blend

Directions

  1. Preheat oven to 375. Grease 9x13 baking dish.
  2. Melt marg in skillet and saute chicken and onion.
  3. In a large bowl, combine corns, salt, pepper, garlic, eggs. Beat in cornbread mix. Pour into baking dish.
  4. In the large bowl, combine chicken/onion, green chiles, mushrooms, sour cream, salt, pepper, garlic. Spoon over corn mixture to w/in 1 inch from edge. Sprinkle top w/ cheese.
  5. Bake for 40-45 min. until edges are golden brown.

Today was my first attempt to mix florals with stripes.  John (hubby) liked the look and thought it had a 40's vibe to it.
I liked it too and thought it felt "fun".
