Dessert - Low Cal Strawberry Crepes

These were very good for a low cal dessert.  Hubby had his with ice cream.  I got the basics for this recipe at http://www.diethobby.com/.  She has many recipes that look wonderful and easy and I will be trying them out soon. 
I did just a couple of slight modifications to the original recipe.

Ingredients
1/2 cup egg whites (3 eggs)
1 1/2 T flour
1/2 teaspoon ground cinnamon
6 packages Equal
1/3 cup Low-Fat Ricotta cheese
1 Tablespoon fat free cream cheese, softened
2 Tablespoon sugar free strawberry preserves
1 cup of sliced strawberries
1/2 Tablespoon chopped walnuts
4 T whipped, canned, pressurized, Fat-Free Reddi Whip
Directions:
Slice one cup of strawberries, and combine with 2 pkg Equal and 1 T preserves.
Chop 1 tablespoon of walnuts.  Set aside.
Spray small skillet with nonstick coating.
Place on medium high heat.
Combine egg whites, flour, cinnamon and 2 pkgs Equal.
Whip together well...just until frothy.
Pour 1/2 mixture into small heated skillet to make a crepe.
Let it set on one side and then flip. Watch it carefully so it doesn't burn.
Once cooked, remove from heat and lay it flat in a plate.
Cook other crepe.
Mix cream cheese, ricotta cheese, 1 Tablespoon strawberry preserves and 2 pkg Equal together.
Spread each crepe with one-half of this mixture.
Place strawberry mixture into each crepe and roll it up. Top each crepe with remaining strawberries.
Sprinkle one-half the walnuts over the top of each crepe.
Just before eating, Spray 2 T of Fat-Free Redi Whip on each crepe.
This recipe makes 2 servings.
1 serving is approx. 200 calories.
