Dinner - Shrimp Salad and Potato Pancakes

SHRIMP SALAD
Ingredients: (2 servings)
14 sm - med cooked shrimp, diced
1 avocado, diced
1/4 cup onion, diced
1/4 cup corn
1/2 cup black beans, drained/rinsed
2 T lemon or lime juice
2 teas. olive oil
garlic salt/powder, salt, cayenne pepper, onion powder
Mix oil, lemon juice and seasoning together.  Set aside.
Mix together remaining ingredients and stir in dressing mixture.  Serve.
