Last night's dinner was Cashew Chicken.
2 chicken breasts, cubed
3 T olive oil
1/2 pkg. real mushrooms
carrots, sliced and steamed ( I forgot to add them)
3/4 c. soy sauce
1/8 c. stir fry sauce
3/4 c. chicken broth
1/8 c. honey
2 T brown sugar
1 T cornstarch
ginger, garlic powder, garlic salt, salt - to taste
1 c uncooked rice
Steam rice according to directions.
Place cubed chicken in a baggie with flour. Toss to coat well.
Stir fry in hot oil till chicken is cooked through. Add in mushrooms and carrots. (May add other veggies of your choice as well.) Stir fry a couple more minutes. Turn down heat to med. low.
Mix together all liquid ingredients, seasonings and cornstarch in a bowl, then add to chicken and veggies.
Stir and add more chicken broth/soy sauce if it's too thick.
Throw in some cashews. Mix. Serve over rice and top w/ a few more cashews.
