Dinner Recipe - Pork Chops w/ apple and Mashed Potato Cakes

This was my first attempt at the oven cooked potato cakes and I'll be making them again.  Leftovers for tomorrow's lunch.  Yum!


Apple Pork Chops
Brown pork chops in sprayed skillet.  Add 2 T marg., add in 1/2 chopped onion and saute.  Chop up a green apple and add to skillet.  Pour in approx. 1/3 c. apple cider vinegar.  Sprinkle in a little brown sugar, nutmeg, cinnamon, garlic salt, onion powder, salt and pepper to taste.  Transfer all to a foil lined baking dish.  Cover w/ foil and bake 30 min. in 375 degree oven.  Place on dinner plate and top with a few pecans.

Mashed Potato Cakes
First, boil enough potatoes to make about 2 cups mashed.  Cook, drain, mash.  Set aside.
Saute 1/2 onion in 1 T marg.  In a bowl add cooked onion, 1 beaten egg, mashed potatoes, 1/3 c. flour, onion powder, garlic salt/powder, salt, pepper and a dash of cayenne pepper.  Drop by spoonfuls onto greased baking sheet, smooshing down a little w/ spoon to form a pattie like shape.  This should make about 6 patties.  Brush tops w/ a little beaten egg.  Bake in 375 oven for about 25 min.  Turn over halfway through cooking time w/ spatula.  When they are done, top w/ shredded cheese and put back in oven till melted.
These may be topped w/ a dollop of sour cream.
