Dessert For Dinner

Today for lunch we had dinner leftovers of oven baked potato cakes.  Someone gave us some cherries and so we decided to forego our normal dinner and have a homeade cherry crisp for dinner instead. lol  Have you ever done that?  I knew we were going to splurge on this dessert and we weren't that hungry for dinner AND dessert....so we just had dessert. 
It was one of THE best desserts either of us had ever had.  A big thank you to the hubby for making it!  I'm no good at baking , so he's in charge of that department.
There were no substitutes to lighten anything in this recipe.  When I eat more this week, it will be a much smaller portion. SO good !!


Fresh Cherry Crisp
Ingredients:
4 cups pitted sour cherries
1 1/2 cups white sugar
4 T all-purpose flour

Topping:
1 cup oats
1 cup brown sugar
1/2 cup butter
1/2 cup shortening

Preheat oven to 375 degrees.
In a large bowl, combine cherries, 1/1/2 cups sugar, and 4T flour.  Pour into9/13 baking dish.
In a medium bowl, combine 1 1/2 cups flour, oats, and brown sugar.  Cut in butter and shortening until crumbly.  Sprinkle over cherries.
Bake in preheated oven for 45-50 min., or till topping is golden brown.

I served warm with ice cream.
